Dairy-free Salmon and Scallops Baked Rice

We spent entire Saturday morning with the kids at botanic garden and we also had our lunch there before we head home. We managed to clock 12k steps today! 😱 it may be nothing much but 12k steps with 3 kids is really a big achievement which drained all of my energy. 😅
So we decided to take it easy for dinner and make do with one pot meal – Baked rice! As always.. Ms. A indulged on this baked rice a lot and managed to eat 2 bowls as she seldom get to enjoy cheesy food outside due to her allergy.
We ran out of stock cube to cook the rice this time so I ended up cooking the rice in Indonesian style, Nasi liwet – cooking the rice with some spices like sautéed shallots , garlic , lemongrass , lime leaves and bay leaves. 😅

Ingredients:

For Rice (we cooked in rice cooker)
– rice (we used 2.5 rice cooker cups)
– 5 shallots, thinly sliced
– 3 cloves of garlic , thinly sliced
– 2 bay leaves
– 2 kaffir lime leaves (cut into stripes)
– 1 stalk of lemongrass , bruised and chopped to 2 or 3 sections

For cream sauce (cooked in a sauce pan over stove)
–1 pack of @orasi_asia soy cooking cream
– 0.5 cup of onion (finely diced)
– a cup of diced carrots
– dried herbs (rosemary and thyme – 1 tsp each)
– 1.5 cup of thinly sliced zucchini
– 1.5 cup Dairy-free Mozzarella cheese @violife_foods

For Salmon and Scallops (marinate for 30 mins)
– Salmon diced (we used 300g fillet cut)
– frozen scallops , thawed and halved. (we only left 5 pieces)
-Tomatoes diced (1.5 medium sized tomato)
– Salt
– Black pepper

For topping before baking
– 113g Dairy-free shredded Parmesan cheese @followyourheart

Steps:

  1. Sauté sliced shallots and garlic in a pan with some oil. Add in bruised lemongrass , bay leaf and lime leaf and continue to sauté for 2 minutes. Add these sautéed spices into the rice and water, stir a little. Cook in rice cooker as usual.
  2. Marinate salmon, scallops and diced tomato with some salt and pepper. Set aside.
  3. Preheat oven to 180deg cel.
  4. In a sauce pan, heat up some oil and sauté onion till translucent.
  5. Add Orasi soy cooking cream, dried herbs , sliced zucchini and diced carrots , cook for 3 mins over medium heat, turn off the heat and stir in mozzarella cheese.
  6. Spread cooked rice on a baking dish
  7. Spread half of the cooked cream sauce on the cooked rice.
  8. Arrange marinated salmon , scallops and diced tomato onto the sauce and spread the remaining sauce on the salmon and scallops
  9. Sprinkle the top generously with parmesan cheese and bake for 20 minutes in middle rack.
  10. Shift the baking rack to top rack and switch to grill mode 200deg cel and bake for another 5-6mins.
