Homemade Pasta

Homemade pasta is so yummy, I’m thinking if I should invest on a noodle/ pasta roller machine! 😅 but it’s actually quite fun to make it if I have the time ☺️ luckily hubby is back so he helped out and saved me so much time! Lunch is served in 2 hours including making noodle , pasta sauce and vegan mushroom soup all from scratch.

Ingredients (4 portions)

– 2 cups of AP flour

– 3 eggs (50g each)

– 1/2 tsp sea salt

Methods:

1. In a big bowl, mix flour and salt evenly and make a well in the middle

2. Cracked 3 eggs into the well and gently whisk the eggs with a fork/ small spatula

3. Slowly mix in the flour from the wall until it’s difficult to mix

4. Roll out the dough and knead in the dry flour with hand till getting a smooth and elastic dough ball

5. Dust some flour on the dough and let dough ball rest for 30 mins in a covered bowl.

6. Cut dough into 4 portions and work on one portion first while keeping the rest covered in the bowl

7. roll dough into a thin sheet (as thin as you can) and sprinkle some flour on the thin dough sheet before rolling up on the rolling pin

8. Slide out the rolled up dough from the side of rolling pin. Cut the rolled up dough into strips with a serrated knife like bread knife.

9. Shake or uncoiling the strips out to get your pasta 🥳

10. Boil pasta in salted water for 3-5 mins (depending on the thickness of your pasta) before serving with sauce of your choice

Tips: we noticed that it’s much easier to unroll the pasta if we cut it with serrated knife and in sawing motion
