Sago Pearl Coconut Milk Agar-Agar

Inspired by @khor.hui.min to make this Sago pearl coconut milk agar-agar or jelly with kids as we have all the ingredients at home. Initially, we planned to only use purple sweet potato powder and pumpkin powder. Thinking that these powder will be healthier than coloring. In the end, looking at the texture of the sweet potatoes paste😅 we were a bit worry that the powder might not be able to mix well with the coconut milk agar-agar mixture. So for blue layer we used a tiny dot of blue gel coloring.

We are pleasantly surprised with the beautiful color combination and kids love this activity as they get to eat their favorite jelly too. 😊

Ingredients for container of about 650ml:

  • 10 grm of agar agar powder
  • 500 ml water
  • 100 grm of sugar
  • 3 pandan leaves
  • 50 grm of sago (soaked for 2 hours)
  • 120ml of thick coconut milk
  • A drop of blue gel coloring
  • 1/2 tsp purple sweet potatoes powder mix with 1 tbsp warm water to form a paste

Method :

  1. Cook soaked sago until transparent and rinse under cold water. Divide sago into 3 portions. Add purple sweet potato paste and blue coloring into each portion. The other 1 portion remain white.
  2. Boil agar-agar powder with water, pandan leaves and sugar and then add in coconut milk. Bring to boil and turn heat to very low heat.
  3. Take 100ml of the agar agar mixture and add in one portion of the white sago. Stir well. (We did the purple sago first)
  4. Pour into a 650ml container mould . Let it coagulate. (Remaining agar-agar mixture should be left on stove with very low heat)
  5. Scratch the surface with a fork.
  6. Take another 100ml of the agar-agar mixture and add in the blue color sago. Stir well and pour on top of the purple layer and let it coagulate.
  7. Continue the same process for the last white portion
  8. Chill in the fridge before slicing. Serve cold.
