[Thermomix] Blue Pea Flower Marble Bread

We needed a loaf of bread for breakfast so quickly made this quick bread (one proofing) with thermomix. Love that I can shape the bread after 10 mins rest,so I basically only work for 30 mins max from preparing ingredients, kneading and shaping. Thereafter, just wait for it to rise, preheat the oven and pop it in.

It’s made with the condensed milk wholemeal killer toast recipe I’ve shared before. Just have to take 1/3 of the dough out after kneading and knead the remaining 2/3 dough with a tsp of blue pea flower powder.

Ingredients:
1 egg
120g water
25g @naturescharm coconut condensed milk
10g caster sugar
1tsp instant yeast
200g bread flour
60g wholemeal wheat flour @foodsterr.sg
1/2tsp salt
37g @plantbasednuttelexsg nuttelex buttery spread
1 tsp blue pea flower powder

Steps:

  1. Place egg, water, sugar , condensed milk and yeast in the mixing bowl, mix 1min 30sec/speed3
  2. Add flour and salt and knead for another 3 mins
  3. Knead for another 2 mins while adding butter ,one cube at a time through the hole on the mixing bowl lid
  4. Take out 170g of dough.
  5. Add blue pea flower powder to remaining dough and knead 30seconds
  6. Transfer doughs to pastry mat , roughly knead a few times with hands. Cover and rest for 10 mins>
  7. Dust some flour and flatten blue dough ball with a rolling pin into a long rectangular shape. Roll out the Plain dough to one third length of the blue dough. Width should be the same as blue dough. Stack white dough on the center of the blue dough. Wrap the plain dough in the blue pea flower dough and do 2 times 3-folds. (3 folds->rotate 90deg-> 3folds) , rotate cut to 3 sections and braid it before proofing in the bread tin.
  8. Let dough proof in the loaf tin till it reaches 80-90% of the tin height (around one hour). At the last 10-15 mins before , preheat oven to 170deg
  9. Bake at preheated oven for 40-45 minutes. Tent with aluminum foil at 20 minutes. (I kept the Pullman tin lid on so didn’t have to tent). Remove loaf from tin from oven and allow to cool on cooling rack before slicing.
