[Thermomix] Chocolate Cake bread

Finally testing this Chocolate Cake bread (thermomix recipe). 😅 as kids been curious about this cake bread hybrid for quite some time and kept asking for this.

This recipe has two parts, first is making the bread and follow by cake. During the last 15 minutes of proofing the bread, we can proceed to prepare the cake batter.

I’m amazed by thermomix’s ability to whip the cake batter so beautifully. 😱

Bread – Ingredients:

  • 50g Unsweeteened soy milk @kikkoman
  • 30g lightly whisked egg
  • 20g caster Sugar
  • 125g Bread flour
  • 2g Yeast
  • 10g vegan Butter @earthbalance
  • 1g Salt
  • 2 tsp cocoa powder

Directions

1. Pour soy milk, sugar & yeast in mixing bowl, activate the yeast at 1 min /speed 2.

2. Add bread flour, egg and salt. Knead using dough mode for 3 mins.

3. Add soften butter & continue to knead for 2 mins using dough mode.

4. Remove dough from mixing bowl, (total dough 220g , I’ve mixed cocoa powder to 70g of dough by hand kneading) shape dough to round and smooth dough balls before putting it in an oiled bowl. Let proof till doubled (about 45min to 1 hour)

5. Flatten proofed dough into a rectangular shape. Stack chocolate dough on lain dough. Roll the dough like Swiss roll. Put it in the center of the lined tin. Cover the tin and proof for 15-20 mins.

Cake – Ingredients:

  • 5 Eggs (55g each)
  • 60g Caster sugar
  • 50g Cake flour
  • 15g Cocoa powder
  • 20g Unsweetened soy milk @kikkoman
  • 20g Vegetable oil

Directions

1. Insert butterfly in the mixing bowl, add eggs, 10 mins / 45°C, speed 4. Remove Measuring Cup after 1 min. Slowly add in sugar through the hole.

2. After 10 mins, continue to whip for 5 min / speed 4, without heat.

3. Mixed oil and soy milk in a bowl. Add flour, cocoa powder and oil and milk mixture, mix 4 sec / speed 3. Use the spatula to lightly mix in the flour till even. Do not overMixed.

4. Pour mixture into bread tin with bread dough in the center. Lightly tap the tin to remove air bubbles.

5. Bake in a preheated oven 180°C for 40 mins.

6. At 10-15mins, take out the cake and use a knife to slit the middle to form a split.

7. Continue to bake for 25 mins. Once done, remove the cake/bread from the mold, cool completely before cutting.
