Nasi Liwet / Indonesian steamed rice

Inspired by my friends to cook this rice for pairing with our oven baked BBQ baby pork ribs. 

Kids enjoyed eating this rice as it has a nice fragrance from the simple spices used. 

My version is not very authentic as I could only find limited ingredients from the kitchen. 😅 this dish is really very versatile ! So you can just come out with your own version of Nasi liwet with ingredients you have on hand. ☺️ have fun! 

Ingredients: 
•2 cups of uncooked rice – washed and placed in rice cooker pot with the usual amount of water you would use 
•35g thinly sliced shallots
•20g thinly sliced garlic 
•1 stalk of lemongrass – smashed and cut to 2 or 3 sections
•Dried Anchovies 20g – washed and pat dried 
•1-2 tsp @liloikanbilis premium white bait powder 
•2 bay leaves 
•Cooking oil 
•1/2 tsp Salt 
•1 tsp Sugar 
•Water 
•1 tbsp Coconut oil 
• 2-3 lime leaves (I did not use this time as I don’t have it on hand)

Steps:
1. In a pan, heat up some cooking oil. Over medium low heat, stir fry shallots , garlic and lemongrass till fragrance (around 5 minutes). Drain some oil away and pour shallots, garlic and lemongrass into rice cooker.
2. Add more oil into pan, heat over medium heat and fry the anchovies till crispy. Drain and set aside. 
3. Add bay leaves, whitebait powder, sugar, salt and coconut oil into the rice. 
4. Cook on the rice cooker with normal mode 
5. When it’s cooked, remove bay leaf and lemongrass, fluff and mix the rice. Served it with the fried anchovies as toppings.
