Vegan vegetable soup

Pairing our carbonara with vegetable soup.

The quantity of each ingredients depends on personal preference. It’s a very simple soup recipe. We love the sweet and sour taste from the canned tomatoes. 😋 recipe adapted from @cookingclassy

Vegan Vegetable soup

Ingredients:

Olive oil

Onion 1 medium size – diced

Carrots 1 medium size – diced

Celery 1 stalk – diced

Vegetable broth – 2L (@kallo )

Garlic – 4 cloves – minced

1 can of peeled tomatoes

Some chopped parsley

Corn kernel – 1 cup

Frozen peas – 1.5 cup

2 bay leaves

Potatoes – 1 medium size (diced)

Dried Thyme 0.5tsp

Salt and black pepper

Steps:

1. Heat up some olive oil in a pot (medium heat)

2. Stir fry onions till slightly translucent, add in carrots and celery. Continue to stir fry for another 4 minutes.

3. Add in minced garlic and stir fry for another 30 seconds

4. Add in broth, canned tomatoes, potatoes, parsley, bay leaves, thyme and season with salt and pepper

5. Bring to boil and reduce heat to medium-low and let simmer until potatoes are tender 20-30minutes

6. Remove bay leaves from the soup and add in the corn kernel and peas. Let it cook for another 5-10 minutes.
