Dairy-free Honey cinnamon cupcake

Leftover egg from egg wash from baking sausage buns earlier, so decided to bake some egg cupcakes for the kids. πŸ˜…

Kids and hubby said it’s soft and not too sweet.

Makes 4 cupcakes.

Ingredients:

2 eggs (50g each)

100g self raising flour ( shifted )

70g honey

A pinch of salt

25g canola oil

Steps:

1. Preheat oven at 170deg

2. Beat eggs, honey and salt till ribbon stage

3. Add canola oil and lightly mix it with egg mixture

4. Fold in self raising flour gently

5. Pour into cupcake liners till 3/4 full

6. Bake for 18 mins
